Grilled or Baked Tahini Chicken!

One of my favorite new additions to a clean and healthy way of eating is to add some delicious new sauces without flour or cheese. I remember the first time I tasted Tahini, straight from the jar. Wow, was I surprised! It is a tad bit bitter! But, when you mix it with lemon or vinegar, it takes on an amazing texture and taste. (Think hummus.) So this sauce pairs great with grilled or broiled chicken with raw or cooked veggies. You still get your sauce, but it’s much more healthy this way!

TAHINI CHICKEN
[Makes 4 servings][/Makes]
2 pounds boneless, skinless chicken breasts (Organic or pastured is best)
cut into 1-inch cubes
sea salt and pepper to taste
5 tablespoons sunflower oil, avocado oil, or coconut oil
2 tablespoons tahini
2 tablespoons sherry vinegar (or Bragg’s Apple Cider Vinegar)
3 carrots, grated
6 radishes, sliced
1 cup chopped cauliflower/broccoli (cut small & lightly steamed)
1/2 cup sesame seeds, for garnish(optional)
Coat the chicken with 2 tablespoons of oil and salt & pepper. Turn the
oven broiler to high or & cook the chicken for 10 minutes, stirring once or twice until
cooked through. Let it cool slightly. Whisk together remaining oil, tahini, and vinegar.
In a large bowl, add broiled chicken and vegetables. Serve on top of Cauliflower Rice for even more texture and taste! Drizzle dressing on top & mix well.
