The Best Beef Stew

 My Mom’s Beef Stew :The Best You Will EVER Taste!

Wow, I know. That’s a pretty bold statement on my part. But it’s true! As long as I can remember, my Mom, Rose Mary, was in the kitchen whipping up something amazing. Especially this time of year, she had the house smelling of some sort of rich soup or stew or casserole that made you melt as soon as you walked in the house. So as I sit here today, I am smiling and thinking of her. My kitchen smells pretty darn good right now. (It’s a mixture of my flax crackers and a big pot of soon to be Chicken Gumbo.) Yeah, I think she would be proud of this:) 20141009_140714_resizedSo that brings me back to her Beef Stew. It was always one of my favorite meals. So warm and hearty and comforting on these cool and rainy days. The only thing that I’ve changed up a bit is the flour in the gravy. So if you have gone Gluten or Grain Free, or are trying to stick to a “Cleaner” way of eating, you can still make this delicious stew. I’ve also converted it to a slow cooking crock pot meal to make it easier for even the busiest of peeps. So you have no excuse to not make this!

 

Rose Mary’s Amazing Stew

Active time: 10 minutes  Total time: 4+ hours   Serves 6

1 medium sized beef roast (Use the best beef you can get your hands on- Organic or Grass Fed) {veggie option – omit + add quinoa}

2 cubed, peeled organic red potatoes

4 diced carrots

6 cloves garlic, sliced

1/4 teaspoon fresh sage, chopped

1/2 cup fresh rosemary

2 cups beef stock, vegetable stock, or bone broth

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

2 tbs. Coconut Oil (divided)

2tbs. Arrowroot Powder (or more, depending on desired thickness)

In the morning, coat the roast with salt and pepper and sear in a skillet in 1tbs. coconut oil (2 to 3 minutes on all sides). Place the meat in the crock pot and cover with stock of your choice. Let it cook for 4 to 6 hours. Saute remaining  ingredients in a skillet and let caramelize on low for about 10 minutes. Add to crockpot. To thicken, add 2tbls. Arrowroot powder to 1 cup of cold water. Mix with a spoon, pressing sides of cup to smooth the texture.  Add to stew on high heat while stirring. I doubt you will have any left over, but if you do, freeze in mason jars and\or take the rest of the week to work or school!
