Pumpkin Spice AMAZEBALLS!
I absolutely love this time of year! Cooling temps, beautiful color and delicious food! I guess delicious food is a part of every season for me, but I get really hungry in the Fall for soups and stews and lasagnas and Pumpkin Spiced anything. I’ve been playing with this recipe for a while now and I think I finally nailed it. This is Gluten Free, Grain Free, Dairy Free, and low in sugar, just like the rest of my recipes. These are also raw and vegan!
Drum roll please! Here it goes:
2 tbls. Almond Butter (I use Justin’s)
2 tbls. Sunbutter
3 tbls. Organic Raw Cacao
3 tbls. Coconut Flour
2 tbls. Coconut Oil (melted)
3 or 4 tbls. of unsweetened Shredded Coconut
4 dates (optional- remove to be completely sugar free)
1 tsp. Pumpkin Spice + enough to sprinkle on top
4 packets of Organic Stevia
Mix all ingredients in your food processor (except for the shredded coconut) and dump into a medium sized bowl. Spoon out into bite size balls and roll between your hands. If they are too wet, you can add extra coconut flour. Too dry, add extra coconut oil. Place shredded coconut onto a flat surface and roll balls to cover. Finally, dust with Pumpkin Spice and pop into your freezer. I usually freeze them for an hour before serving.
These are truly AMAZEBALLS! Great for a healthy snack, fun dessert, or even a power packed breakfast with your coffee!
