Chili Dipped Lettuce Wraps
Since I have been making soups and stews and heavier meals with the cold rolling in, it’s nice to have something a little lighter that is crunchy, completely satisfying and easy to whip up! If you like Thai peanut sauce or Asian lettuce wraps, you will love this!
1 bunch of Romaine Lettuce
1 grated beet
1 red bell pepper
1 avocado cubed
1\4 cup of sunflower seeds
Wrap: Please choose your favorite healthy green such as collard, romaine lettuce, or kale. If you would like to boost your thyroid, then wrap this mixture into a Nori Sheet (which can be bought at Natural Life, Kroger or on my site’s store). Feel free to add grilled chicken or your favorite fish!
Spicy Sunbutter Sauce:
3 Tbsp. sun butter (sunflower seed butter)
¾ tsp. grated ginger
1 1\2 tsp. of Lawry’s Chile and garlic blend (less expensive than chipotle powder alone)
2 Tbsp. extra virgin olive oil
2 Tbsp. water
1 tsp. honey
1 Tbsp. lemon juice
The sauce is also great to have in the fridge if you want to use it for a dip for apples, cucumbers, celery or bananas. The added bonus? It’s spicy, so it will keep you warm!
How to Fix:
Thinly slice the vegetables. Add the dip ingredients to a food processor and blend until smooth. Then add this delicious mixture and wrap with collard greens, romaine lettuce or kale.
You can also add a clean protein, such as chicken or fish to these wraps! They are scrumptious!
The sauce is also great to have in the fridge if you want to use it for a dip for apples, cucumbers, celery or bananas. I make little “sammies” with apple and zucchini! The added bonus? It’s spicy, so it will keep you warm!
