Chia Pudding!

Yes, you probably want to start singing the jingle from the commercial:  Ch-ch-ch-chia (pet). And yes, you can eat this seed! Who would have thought it was so healthy back in the day? This recipe is so easy to make it’s almost too good to be true. So here is goes:

(This makes 1 serving)chia pudding

3 tablespoons chia seeds
1 tablespoon shredded coconut
1/2 cup berries
1 cup unsweetened coconut milk
1 packet stevia (optional for
sweetness)
Combine all ingredients in a bowl and chill in refrigerator until the chia turns into
a pudding consistency, about 20 minutes.
Add a scoop of protein powder for an extra boost of energy.

 

Now, let’s talk about the health benefits of chia. It is a superfood, for sure! According to Dr. Andrew Weil, chia is very rich in omega-3 fatty acids and provides fiber as well as calcium, phosphorus, magnesium, manganese, copper, iron, molybdenum, niacin, and zinc. This is a great replacement for oatmeal. I know, I know. Oatmeal is healthy right? Well, if you are trying to lose weight and balance your blood sugar, it is better to stay away from a high glycemic grain, such as oatmeal.  (Also, if you are on a Gluten-Free diet, remember that unless specified on the package, oatmeal is not always Gluten-Free.)
